Low calorie cooking spray
115ml chicken stock
400g vine tomatoes, roughly chopped
2 yellow peppers, deseeded and cut into 1cm cubes
1 level tbsp tomato purée
1 tsp dried oregano

Salt and freshly ground black pepper

Slimming World's Whisky Orange Trifle

Serves: 4 People

Prep Time: 20 Minutes plus cooling and chilling.

Cooking Time: 0 Cooking Time

Skill Level: Easy

Cost: Cheap

An extra special festive treat from Slimming World. Ready in just 20 minutes and it's good for you! This boozy trifle is the perfect dessert for a celebration.

Ingredients

•170g/ 6oz kumquats, washed and thinly sliced
•4 tbsp artificial sweetener
•2 tbsp whisky
•½ tsp ground cinnamon
•2 large oranges
•6 sponge fingers, broken into bite-sized pieces
•340g/ 12oz fat free natural fromage frais
•28g/ 1oz plain chocolate

Method

1. Place the kumquats in a small saucepan with 4 tablespoons of water and 1 tablespoon of sweetener. Bring to the boil and simmer gently for 6-7 minutes until tender. Transfer to a small bowl, stir in the whisky and cinnamon and set aside to cool.

2. Meanwhile, prepare the oranges. Using a vegetable peeler, pare off a few strips of rind from one orange, slice into thin strips and place in a small bowl of water. Chill and reserve for decoration.

3. Grate the peel from the other orange until you have ½ teaspoon rind and reserve this. Using a small sharp knife, slice the rind off both oranges, removing as much of the white pith as possible. Over a bowl, cut in between each segment and remove the portions of orange flesh and place in the bowl.

4. Place the sponge finger pieces in the base of a glass serving bowl. Top with the orange segments and any juices. Cover and chill until required.

5. Mix the fromage frais with the remaining sweetener and the reserved grated orange rind; cover and chill until required.

6. To serve, spoon the kumquats and their juices onto the oranges and top with the fromage frais. Grate the plain chocolate over the top and decorate with the drained orange rind strips.

Slimming World's Banoffee Pie

Serves: 10 People

Prep Time: 15 Minutes plus cooling and setting.

Cooking Time: 15 Minutes

Skill Level: Easy

Cost: Cheap

Slimming World's Banoffee Pie is a guilt-free dessert you'll just love if you're on the Slimming World plan. Made with bananas, low-fat spread, digestive biscuits and a Slimming World favourite, Muller Light, this creamy dessert is a real treat. This recipe takes about 30 mins to prepare, plus cooling and setting time, and serves 10 people - perfect if you've got friends round for dinner. This celebrated pie was created in Britain in the 1970s, and the combination of banana and toffee has been thrilling pudding fans ever since. This Slimming World version uses toffee yogurt and fresh bananas.

Ingredients

•60g low fat spread
•10 reduced fat digestive biscuits
•2 x 12g sachets powdered gelatine
•250g quark
•3 x 175g pots Muller Light Toffee yogurt (or any free toffee yogurt)
•1 tbsp sweetener
•1 tsp vanilla extract
•2 egg whites*
•2 bananas
•2 level tsp cocoa powder, to decorate

Method

1. Preheat the oven to 190C, gas 5 and line a 20cm springform tin with non-stick baking parchment.

2. Melt the spread in a pan over a low heat.

3. Meanwhile, put the biscuits in a sealable food bag, bash into fine crumbs with a rolling pin and tip into a bowl. Pour in the melted spread, stir well and spoon the mixture into the prepared tin to cover the base, pressing down evenly. Bake for 12-15 minutes then set aside to cool.

4. While the base is in the oven, dissolve the gelatine in 5 tablespoons boiling water.

5. Put the quark in a bowl and whisk until smooth, then whisk in the yogurt, sweetener, vanilla and gelatine liquid.

6. Whisk the egg whites in a bowl until stiff peaks form and fold into the quark mixture.

7. Spoon the quark mixture over the biscuit base and smooth the surface with a palette knife. Chill for 4 hours or until set.

8. Release the pie from the tin and put the pie, still on its base if necessary, on a serving plate. Thinly slice the bananas and arrange neatly on top, then sprinkle with cocoa powder and slice to serve.
